Spark's Dehydrated Green Peppers

For a 4-H project Spark made dehydrated green peppers. First he picked the peppers.

This was just a small percentage of the peppers we grew this year. Pretty impressive since the ducks ate each and every plant off earlier in the summer and the had to grow twice.

To get the peppers ready for the dehydrator, he cut off the tops and plucked out the seeds.

Sliced the peppers into strips as close to the same size as possible.

Laid the slices out on the dehydrator trays.

And the finished product! These didn't take long to dry, about a day and half. We don't run our dehydrator at night so if you did it would take even less time. They are real crispy and I think would work well as a substitute for potato chips with a sandwich. Dip would make them even better!
